On a 292 what is the difference between a car and a truck water pump?

The fan/pulley hub is larger on the truck pump.

The shaft is 3/4" on a truck vs 5/8" and a different length. I don't know which is longer but the pulleys also have a different offset, to match their respective pumps. Belt positioning is the same as long as the pulley matches the pump.
I don't know if there was some engineering reason for the larger shaft diameter but for how the trucks are typically used today, a car pump and pulley combo works perfectly fine and will be easier to find. Although the car pulley diameter tends to be larger, which can contribute to overheating in some scenarios or regions.

The water pumps for the 1957-1962 Ford cars and pickups/trucks are the same with those having a 5/8” pilot for the pulley. Those pumps are interchangeable.
The 1963-1964 Ford Y pumps for the pickups and larger trucks went with a ¾” pilot and thus requires the appropriate water pump pulley. The larger pilot for the ’63-’64 water pumps was to accommodate the larger bearing that was being used in those particular pumps.

Ted if I could go off topic for a moment, my 312 has an E4 cam. The Isky website says set valve lash to .015 hot, what would be a good cold setting.
