On my 57 bird I have replaced the vacuum wipers with electric and have no need for the vacuum boost from the fuel pump. Is there any reason I couldn't use the fitting on the back of the intake that is shared with the brake booster as point for the pcv to connect to the intake as opposed to a plate on the bottom of the carb?

Dont do it, it will cause the cylinders that are on that runner to run lean, go for the carb spacer so that the extra air from the PCV goes to all cylinders equaly

What replacement carb did you use?The newer replacements like the 390 cfm has a vacuum hookup for a PCV.
