I had some minor problems with the Holly carb on my Mustang after not running it for a couple of months. The light bulb in my head went off and I am thinking why not put a shutoff valve in the fuel line and shut the fuel off and let the carb run empty when I am not going to run it for a while. Thinking the same thing for my T-Bird and any car that sits for extended periods of time. My generator and Zero Turn mower both recomend shuting the fuel off and letting the carb run dry. Does anybody see a down side to this line of thought?

That's the way to store a vehicle. You don't need a valve. You can clamp a piece of rubber line or simply disconnect the line and let it run until it stalls.
