I bolted the starter that came with the car on the bell housing and after I tightened it up I can turn the starter shaft one way and I hear the gear that is attached to the starter click. I always thought it should disengage from the flywheel. and also what kind of cap goes on the end where the starter shaft protrudes

The starter is probably OK.  It needs for the engine to start to spin the starter drive fast to disengage the teeth.  There was a pressed steel cap that fit in the hole in the bellhousing.

Timmy,I THINK maybe(not sure) you are after the bushing that is pressed into the end housing.TEE-BIRD.com has them.Part# 11052A. Bushing,starter front end plate.$1.75.If you dont mind a suggestion,get a parts catalogue on CD.I have the one from Detroit Iron and it has parts catalogue,shop manual,trans manual,and more.They are available online order.Search=Detroit Iron.Extremely useful for illustrations and shop manual how-to.Sounds like you are going to be doing a LOT of work on this car.You might consider my suggestion.
