Since a fresh motor would likely produce higher oil pressure/flow to the rockers (even with restrictors) with resulting mess, and uncovered valve gear would make detection of strange noises/non-rotating pushrods, etc. much easier during cam break-in, what about slicing the tops off of a beat old set of steel Y-Block valve covers? (they are cheap) Worth the effort?
