An adapter such as this one.....
http://www.speedwaymotors.com/Holley-Flathead-Carburetor-Adapter,5551.html.... will allow mounting the later carbs on the early four-barrel manifold. It is specific to the smaller carb bores - but other sizes are available.
As Rob suggests, when you select a carb "smaller works better" for most use. The Holley 390 cfm and 465 cfm carbs work in the 4160 style and there must be a zillion guys that have used the 600 cfm version. If you use the 600 you need to use a very stiff vacuum secondary spring - and basically tune as if you have a giant two barrel on there (this is for street use). Many have used the Edelbrock 500 cfm with success as well. All in all its based on what you can afford to spend - or what you know best.
